This recipe uses the dried plums dry to avoid meat drying during cook and a special flavour to the meat. This rolls are fantastic, but you need more than one hour to cook them.
You need:
- beacon
- slight slice of pork
- dried plums, one for 2 rolls
- flour
- Wine, usually red one, but any type is good
- Salt
- Sage
- Oil
- Toothpicks, one for roll
Put a slice of beacon on every slice of pork.
Roll the pork with inside the beacon, stop at half of the roll, insert half dried plum and finish to roll.
Use one tooth pick to maintain closed the roll.
Cover with flour the rolls.
Take a pan and crate a film with the oil, put the rolls in the pan , use a low flame or temperature to cook, cover with a lot sage the rolls. Cook rolling the rolls in the pan until the change color.
Now start to use wine, pour a bit of wine in pan and continue cooking and rolling the rolls in the pan. When the wine evaporates, put it again at least other 3 times.
The total cooking time in the pan is about 1 hour, remember to roll the rolls in the pan to obtain a uniform cooking.
